Masking fluid is your friend.

Masking fluid allows for highlights to be easily defined when using watercolour. I like to apply the masking fluid (block out) first before doing any painting. If you find the area is too sparse or too white when finished, it is easy to paint back into it later. It is not so easy to remove paint.
